Anyone who has been to Hoop Convergence has been lucky enough to experience this amazing dressing. I ate it on everything! Salads, rice, pasta, beans, veggies, fish, potatoes… I briefly contemplated drinking it. I could not get enough of this stuff! It is delicious and it is very easy to make. The folks at Chestnut Ridge gave me their special recipe and they gave me permission to share it with you. Enjoy this taste of Hoop Convergence. CHESTNUT RIDGE’S JAPANESE PEANUT SALAD DRESSING
Prep Time: 10 Minutes
Servings: 12

INGREDIENTS:
1/2 cup canola oil
6 tablespoons rice wine vinegar
6 green onions, thinly sliced
1/4 cup peanut butter
1/4 cup sweet chili sauce
1/4 cup tahini (or sub more peanut butter)
1/4 cup sugar
1 1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup soy sauce

DIRECTIONS:
In a jar with a tight-fitting lid, combine all ingredients and shake well. Store in the refrigerator.
